While grocery stores often carry strawberries, tomatoes, and potatoes year-round, nothing compares to enjoying produce at its peak. This fall, we’re embracing the flavors of the season with one of our favorite recipes: a savory Acorn Squash Dip with peppers, garlic, and sage.

Acorn squash is a fall classic for good reason. Full of vitamins A and C, fiber, and antioxidants, this squash supports immune health and adds natural sweetness to savory dishes. Roasting it enhances its nutty flavor, making it the perfect base for dips, spreads, and more.

Savory Acorn Squash Dip Recipe

Ingredients:

  • 2 medium acorn squashes

  • 2 tablespoons olive oil

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 small bell pepper or banana pepper, diced

  • 2 cloves garlic, minced

  • 1/2 teaspoon fresh or dried sage

  • 1/2 cup cream cheese or Greek yogurt

  • 1/4 cup grated Parmesan cheese

  • Fresh sage leaves for garnish

Instructions:

  1. Preheat your oven to 400°F. Slice the acorn squash in half, scoop out seeds, and brush with olive oil, salt, and pepper.

  2. Roast cut-side down on a baking sheet for 25-30 minutes, until tender.

  3. Meanwhile, sauté the diced pepper and garlic in a small skillet with a little olive oil until soft and fragrant. Stir in the sage.

  4. Scoop the roasted squash flesh into a bowl and mash until smooth.

  5. Stir in the sautéed pepper, garlic, sage, cream cheese, and Parmesan until creamy. Taste and adjust seasoning as needed.

  6. Transfer to a serving dish, garnish with fresh sage leaves, and serve warm with crackers, sliced veggies, or crusty bread.
